These are the things I truly miss having in Jamaica. Roast fish is another meal I cannot deny, nor would deny, even on a full stomach. When prepared properly, this delight is beyond amazing! The trick is truly in the variation of spices that is applied. When not cooking all the fish right away, I still season and spice them up before placing them in the freezer.
When ready, simply thaw in warm or room temp water or leave out for an hour. Add the contents to foil paper a little taller than the fish, and place in the oven at 400 degrees.
Cooking takes about 30-45 minutes depending on the contents and whether the fish is still cold. Check every 15 minutes after a half hour with a fork for tenderness as fish does not take a long time to cook.
Once done, enjoy with bread, crackers or other foods 🙂
