Oxtail Dinner

Absolutely delicious combination of savory greatness in one plate.

From the spices to the cucumber slices, your taste buds are in for a tasty treat with this meal. Flavorful and colorful, you’re sure to try this amazing dish over and over again. Many tend to over-indulge in this dish, as its aroma is ever so craving to the sense of smell. So even when you’re already full, you’ll feel the need to nibble just a little more.

How it’s made

As the popular saying goes, “good things come to those who wait…”, this dish proves that point. Oxtail (or cow’s tail) is particularly hard to cook. The meat is hard and requires lots of cooking before it can be fully enjoyed. The red peas is also very hard to cook, yet once prepared, you wouldn’t have it any other way.

Items Needed:

Best to shop for these ingredients at a farmers market or green grocery store. The meat can easily be obtained at any Caribbean or middle eastern meat market or supermarket.

  1. Pressure Cooker (having two would be beneficial)
  2. Oxtail (1lb per person)
  3. Red Peas (red Beans / Kidney Beans) the raw kind, no cans
  4. Coconut milk in the box, no cans
  5. Jasmine Rice
  6. Sea Salt (or Himalayan salt)
  7. Browning
  8. Black Pepper
  9. Thyme
  10. Sweet Peppers (red and green)
  11. Brown Sugar
  12. Irish Potato (brown or red potatoes)
  13. Scotch Bonnet Peppers (or Habanero Peppers)
  14. Scallion
  15. Garlic Cloves
  16. Olive Oil (or vegetable oil)
  17. Cucumbers
  18. Lemon (0ptional)

Preparation:

Oxtail Preparation

  1. Get a large meat washing bowl
  2. Place the oxtail pieces in the washing bowl (or sink)
  3. Fill bowl with water
  4. Use your hands to wash and rub the meat for about 1 minute
  5. Throw out that water
  6. Wash again with more water
  7. Place the Oxtail in the pressure cooker with the garlic cloves
  8. Place 1/4 pot of water in the pressure cooker
  9. Add 1/3 teaspoon salt
  10. Cover the pressure cooker
  11. Cook for 30 minutes (cook begins when the pot begins whistling)
  12. After cooking, it is important that you wait until the whistling stops then spin the top nob of the pressure cooker until there is no pressure. Then it will be safe to open the pot.

Red Peas (red beans) Preparation

  1. Wash a handful of red peas
  2. place them in a pressure cooker
  3. Add 1/4 pot water in the pressure cooker
  4. Cover the pressure cooker
  5. Cook for 40 minutes (cook begins when the pot begins whistling)
  6. After cooking, it is important that you wait until the whistling stops then spin the top nob of the pressure cooker until there is no pressure. Then it will be safe to open the pot.

Rice Preparation (After peas is done)

  1. Grab a bowl
  2. Add 1lb rice per 2 people (or as you see fit)
  3. Add water and wash the rice once
  4. Drain the water from the rice carefully and set the bowl aside
  5. Add the red peas and water to a medium sized pot
    1. Note: Water should be at about 1/2 of the pot’s volume at max
  6. Add a stalk of thyme
  7. Add a little salt until you can barely taste it
  8. add an inch of coconut milk
  9. turn on the fire and wait until boiling
  10. add rice to boiling pot and cover the pot
  11. turn down the stove to medium low
  12. once the water begins to be absorbed by the rice, and the rice is visible, turn fire down to low
  13. rice should be cooked in about 23-30 minutes

Final Duo – Oxtail Completion

  1. Peal the potatoes and cut into squares
  2. Cut about 1/4 of the sweet peppers into small thick slices
  3. Cut about 1/4 of the scotch bonnet pepper
  4. Set aside a small stalk of thyme
  5. Cut a stalk of scallion into small pieces (cubes)
  6. place them all in a large frying pan (except the thyme)
  7. add about 7 teaspoons of olive oil to pan
  8. pour an inch of a cup of water in the pan
  9. turn on the fire on high
  10. cover the pot
  11. cook for about 2-3 minutes and still frequently
  12. pour oxtail water into the frying pan
  13. add oxtail to the mix
  14. add 1/4 tea spoon brown sugar to the mix
  15. add a 1/4 tea spoon browning to the mix
  16. add the thyme to the mix
  17. Cook for 30-40 minutes

Once completed, this dish is ready to be served as pictured above. The drink is lemonade with brown sugar as the sweetener.
